For a speedy second meal from this recipe, double the batch of the cooked ground beef mixture and freeze in sealed container for up to 3 months. To prepare the meal from the frozen cooked ground beef mixture, just thaw and cook with the green beans and red pepper as outlined below.
Serve stir-fry recipe over whole wheat spaghetti or rice noodles. For 4 servings, cook 6 oz (175 g) pasta while the meat marinates.
The trio of sweet peppers in red, yellow, green was the inspiration for the name of this quick-cooking stir-fry. You can substitute Strip Loin Grilling Steaks for the Top Sirloin if you like – no need to cut them in half to start.
