Cheese Crowned Beef Tenderloins

An elegant meal doesn't have to take hours to prepare. This specialty beef recipe is SO easy!
4Beef Tenderloin or 1-inch (2.5 cm) thick Beef Grilling Medallions
¼ cup (50 mL) herbed Chevre or fresh goat cheese
½ cup (125 mL) seedless raspberry jam
¼ cup (50 mL)balsamic vinegar
  1. In medium, oiled skillet over medium-high heat, brown steaks for 3 to 4 minutes per side for medium doneness.
  2. Remove steaks to baking sheet and top each with one quarter of the cheese. Cook under preheated broiler for 3 minutes or until cheese is just browned.
  3. Meanwhile, stir jam and vinegar into skillet and bring just to boil. Serve steaks on a pool of sauce, drizzling a little over top.
  • Tip: Simply half the recipe for a candlelight dinner for 2.
  • Variation: Substitute whole cranberry sauce for jam and dry red wine for vinegar
