Mark is the Senior Research Scientist at the Alberta Agriculture Food Processing Development Centre. He is responsible for assisting processors in product and process development to meet the demands of Canadian and International markets and to promote continuous growth of the Alberta meat industry.

With over 30 years of experience in various supervisory, management and research positions with major meat processors and regulatory agencies (CFIA), Mark has a practical approach to process development and technology transfer to assure that the meat processing industry maximizes their competitive advantage in the evolving retail and food service market.

Mark holds a M.Sc. in Food Science and Technology from Warsaw Agricultural University, Warsaw, Poland.
