| Thanks to continued consumer confidence in beef, sales in Canada remain at normal levels. But the current trade disruption is creating challenges within the distribution chain. Canadian packers are not able to sell a large portion of the beef carcass typically sold to export customers. At this time of year, there is a strong demand for rib and loin cuts such as grilling steaks. But these cuts represent less than a third of the carcass. Much of the balance, which is comprised primarily of hip, chuck, and variety meats such as liver, have traditionally found markets beyond Canada’s borders. Without exports, the domestic market has an over supply of marinating and simmering steaks, pot roasts and rotisserie roasts. Due to the backlog of these items, packers have cut back production levels, which further reduces the supply of rib and loin steaks and roasts. Consumer can take advantage of this situation, and at the same time help Canadian beef producers. How? By choosing cuts alternate cuts such are marinating and simmering steaks for the barbecue.
